Staying in business
The kitchen down the road has changed hands 3 times in the last 3 years. This time I think they're staying. They've found their groove.
I had eggs and greens there this morning. They were delicious. One of the ladies put extra mushrooms on the side. Would you like a bottle of water? Yes, please.
The reason I think they're staying?
They keep it simple. The menu has simple items. Five or six good dishes and each of them look amazing when they come out.
Every time people see their food being delivered their eyes light up. That's the reaction you want.
That's how you do it. Choose a few things and do them well.
